SUE’S CHOCOLATE BROWNIES
1
HONEY OAT SLICE
620 grams butter
1/2 cup honey
4 cups rolled oats
2 cups wholemeal flour
2 cups raw sugar
2 cups sultanas
2 cups raisins
4 teaspoons Baking Powder
Melt butter and honey and add all ingredients. Mix well together. Press into 2 baking tins well oiled, or buttered. Press well into the tins as the mixture rises as it cooks but falls when its cooked. Have a tray under the tins to catch any overflow. Replace in tins. Bake at 180*C for 15-20 mins.
SHORTBREAD
1/2 lb softened butter
5 heaped tablespoons icing sugar
4 heaped tablespoons cornflour
1 and 1/2 cups plain flour
1/2 teaspoon Baking Soda (bicar of Soda)
Mix all together with lightly melted butter. Turn out onto a clean bench top or floured board. Knead well add a little more flour so it doesn’t stick to the surface. Shape into a log. Cut into quarters. Slice off about 1/2 inch thick slices. Put on greaseproof paper on oven baking tray. Mark with a fork or the back of a teaspoon, or any design or shape you like.
Bake at 150* celsuis or 300* Farenheit for about 20 minutes, until light golden. Allow to cool a little on the oven slide before cooling off on a wire wrack.
CRUMBED FISH
In 3 separate dishes have a whisked egg and salt, plain flour, and crips breadcrumbs.
Put the fillets in the flour first, then the egg mixture and lastly the breadcrumbs.
Have hot oil in a pan, place crumbed fish into cook. Turn once.
PASTRY
1 and 1/2 cups plain flour
5 ozs butter
salt
1/2 teaspoon Baking Powder
frig cold water, about 1/2 cup or a little more
Method
Grate the butter into the flour, salt and Baking powder. Then add the water. Using a table knife mix together by cutting the flour and butter mixture with the cold water. Must be a stiff just combined mixture, too wet, add more flour.
Turn mixture out onto clean floured bench top or baking board. Mould together. Then start to roll it out, add more flour when needed. Roll about 4 times or so. Roll with light strokes.
Then use for chicken pies. Meat pies (always add worcester sauce to the mince meat). or make into Cheese straws by adding grated cheese and pepper, fold over and roll to 1/2 inch and cut into straws.
or Apple or Apricot pies etc Bake at 400*celsius until cooked about 20 minutes etc.
MY MUSELI
4 cups rolled oats
2 heaped tablespoons of honey
1/2 cup dessicated coconut
1 cup grapeseed oil
1/2 cup wheatgerm
1/2 cup ground linseeds
Place all ingredients into a bowl and mix with hands until its all well combined.
Place the ingredients into the meat dish and bake at about 75* celsius about 100* Farenheit for 20 minutes, turning the mixture once bake another 5 or so minutes, remove from oven and cool.
Next chop up walnuts or any nice nuts, chop any nice dried fruits, as much as you like in a mix, and 1 cup sultanas. Stir into the rolled oat mixture. Store in an airtight container.
LEMON SOUFFLE DESSERT
Place a half filled meat dish of hot water into the oven on bottom rack. Heat oven to 175* Celsuis or 350* Farenheit. Into a saucepan cut into small pieces 4 ozs butter (1/4lb butter) and warm till melted, then add 1 cup sugar, 1/4cup plain flour, the grated rind and juice of 2 lemons, the yolks of 2 eggs, wisk a second or two, then add 1 cup of milk, and wisk until all combined. Beat with an eggbeater the 2 egg whites until stiff, then add to the above mixture. Wisk the lot lightly and pour into a pyrex or similar dish about 15cm or 6 inches at the base. Place this bowl into the pan of boiling water in the oven. Bake about 20 minutes. Look at the top and when its nicely golden it will be set. Remove carefully from oven. Cool and serve with whipped cream.
COUS COUS BAKE
Half fill a saucepan with water, add about 1/2teaspoon salt, and 1 tablespoon of oil. Bring to the Boil then turn off the element. Add 1 cupful of Cous Cous to the boiling water place lid on saucepan. Leave about 10 minutes orso. Cous Cous swells up and fills the 1/2 saucepan.Beat together 4 or 5 eggs and 1 cupful of cream.Add 4 or 5 chopped garlic cloves, grated cheese,cut up with a scissors or sharp knife smoked salmon
slices, and salamai pieces. Put mixture into an oven baking
dish. Slice tomatoes on top and add more grated
cheese. Bake in a hot oven about 350*- 375* Farenheit
for about 20 minutes or until it sets and is a golden colour.
Can be eaten hot or cold.
BILLY LOAVES
- 1 cupful of wholemeal flour
- 1/2 cupful of plain white flour
- 2 large tablespoons of golden syrup (by product of
- cane sugar)
- 1 cupful of milk
- 1 heaped teaspoon of Bicarbonate of Soda
- Salt to taste
- 1 cupful of sultanas,
- chopped lemon peel can be added or chopped apricots
- 1/2 cup chopped walnuts.
- a mashed banana can be added.
Mix well together.
Half fill a saucepan with water bring to
the boil.
Grease with butter, 3 tins, (size about 3 inches
wide by 4 and 1/2 inches long). Any such tins will do.
If they have lids use them and butter the lids too, or use
a piece of glad-wrap or plastic cling as a lid, however pull the
wrap up as the mixture rises in the tins. 1/2 fill the tins
with the above mixture, place them in the saucepan of
boiling water. Put the lid on the saucepan. Simmer for
3/4 hour. Take them out of the saucepan. Have a teatowel
ready on a wire wrack and shake the loaves out onto the
teatowel. cover them with the teatowel until they are cold.
Slice and butter. (old Miner’s receipe)
PIKELETS.
2 eggs beaten
4 tablespoons sugar
2 tablespoons oil
2 cups Self Rising Flour
1 cup milk, ( plus more milk to make a runny drop off the spoon) quite a bit more milk etc.
Cook Pikelets in electric frypan slightly oil or buttered, or cook on a griddle pan. Turn over. Stack in a teatowel.
FRUIT FLAN
120 gms butter
150 gms sugar
2 eggs
1 teaspoon Baking Powder
5 ozs plain flour
Cream butter and sugar add eggs flour and B.Pdr. Mix well. Add drained tin of fruit salad. Mix again. Press into oiled baking tin. Sprinkle with 5 tablespoons sugar. Bake 325 * 15-20 minutes or so. Cut when cool. eat as it is or serve with cream.
MUFFINS
1/2 cup oil
3/4 cup sugar
1 cup milk
2 cups self rising flour
1 egg
1 tablespoon custard powder. Bake in paper patty cups or muffin tray. 10-15 minutes. Oven 350*
SQUARE
3 ozs butter
6 ozs sugar
1 cup coconut
1 cup mixed fruit
4 ozs self rising flour
1 egg
Mix all together. Press into greased tin @ 150* bake for 30 minutes.
LEMON HONEY
4 Lemons
125 gms Butter
2 cups White Sugar
4 Beaten Whole Eggs
Grate the rind off the lemons, squeeze the juice from the halved lemons, (Lemons can be Meyer or Lisbon or a mixture of both varieties), strain the juice through a tea strainer, add to the rind. Then add the 2 cups of sugar, add the beaten eggs, lastly the butter cut into small pieces.
Half fill a saucepan with water, bring to the boil. Have your lemon mixture in a heat proof bowl or stainless steel bowl, that will fit the saucepan of boiling water. A bowl with a lip that will sit on the rim of the saucepan is best. Using a wooden spoon keep stirring the lemon mixture as the water underneath keeps on a low/medium boil. The mixture will thicken as it reaches just on the boil. Turn off the heat. Gently remove the bowl from the water. Cool with a cloth covering it. When cold put into small jars with lids. Keep in the frig. Lovely on toast, icecream, cheesecake, or pastries.
